I made my first batch of Christmas cookies and of course, they are my favorite! These are Icebox Cookies from the local Catholic cookbook from back in the day (1977, to be exact). They are simple and are a slice/ bake kind of cookie.
2 eggs 2 sticks of softened butter
2 cups of brown sugar 3 1/2 cups of flour
1 tsp of baking soda 1 cup of walnuts
So add the butter and sugar together in the mixer till creamed together, then add the eggs and baking soda. Add the flour a little at a time till mixed. Don’t over mix. Then get 2 sheets of waxed paper about the size of 9 x 13 pan ready, dump half the dough on each sheet. Form a brick shape with the dough and refrigerate at least for 4 hours or overnight. Slice about 1/4 inch slices and place on cookie sheet, bake at 350 for 12 minutes. Cool and enjoy!!! They didn’t make it to the plate, we ate them off the pan! Blessings!
